I didn't have HBO, haven't seen Game of Thrones. What animal head is that supposed to be ?

It's a Direwolf head. The Sigil of House Stark, where Jon came from and a white one for the direwolf that belongs to Jon. It replaced the bear head that was originally on it(original owner's Sigil), and was burned off. The sword was rehandled and given to Jon as a gift from his Commander for saving his life.

It does look similar to a wolf, but the ears are where a human's would be. It looks like a werewolf, not a wolf.
