I have in the past worn a full suit not really Templar but European armour I made most of it but did resort to purchasing some pieces. Mine is all steel for me that's the only way. If you haven't seen it my ironman suit is all steel. Not to mention my samurai that is visible in the background of my ironman photos. If I can offer some pointers or tips pm me. You can find patterns on a site The Armour Archive that would be a good place for you to do some research and find the much needed patterns.

If you're goin accurate to the time than it's going to be chainmail from head to toe. A white surcoat with a red cross. If you add a helmet it'll be a migration style helmet. Your sword would be a single handed like an Oakeshott Type Xa. Your shield is going to be wood with maybe a canvas or leather covering. With crusading knights they're not too complex until you get to the latter crusades when plate starts to show up. For the Templars it'll be earlier armor. I'll see if I can dig up some good photos to post. I would also check out Kingdom of Heaven if you haven't seen it. Some pretty good representations of the armor in the film.

Knights Hospitaller are so much more interesting....

Knights Hospitaller - Wikipedia, the free encyclopedia

But armour studies for either knights is confusion at best (at least for me).

I built a simple yet period relevant helmet from Armour archive patterns in card stock then fiberglassed it.

I stitched a tunic from painters drop cloth, dyed black. Stitched leather crosses painted white onto the tunic & a pair of welders gloves painted black.

Running out of time I found a open weave material at Joann Fabric that I was able to spray paint silver *yes I said spray paint as dying was a failure on the synthetic material. This was my chain mail material that I "sewed" into a shirt & pants using embroidery thread knotting intersections and then cutting out the shirt/pants shapes.

The "axe" was made from a broken shovel handle, cardboard, foam, fiberglass and bondo.

The surcoat you're looking at is the Assassin's Creed Templar surcoat. There's a cape that goes with that one also. You might look at maybe basing your build on that design. As far as knight orders from the time, three of the big ones would be Templar, Hospitaller, and Teutonic. Each one actually has some pretty interesting contributions. I wouldn't necessarily say one is better than the other.

Based on the time period they operated your hands would be covered in chainmail mittens like these:

If you did wear a helmet it would be something like this:

You could go with just a coif though and forgo the helmet.

These were some of the best representations I could find online:
