I want to replicate knife from Francis Ford Coppola's "Bram Stoker's Dracula".
(The one with which she cuts off his head)

Good Start. I see a few thing on the handle that are a bit off.

Top to Bottom:
Reverse retraceable versions for the driving the knife in the chest scene. (2)
Traditional retractable versions (2)
Hero with steel blade and bronze fittings (2)
Aluminum stunt, one cut off and mounted in chest plate block
(Missing) Rubber knives (You posted a picture of one of these above)

(These pictures were taken just after principle photography wrapped)
 
Factory-X did a pretty decent licensed replica of that knife. I sold a bunch of them back in the early 2000s and of course kept one for my collection.
